My Rock Crock from Pampered Chef is really my favorite thing ever! The fact that I can easily microwave and then stick that same container in the oven, makes life so much easier!! We usually have scalloped or au gratin potatoes for Easter and I am the only one who …

It is a cold one in Florida today, rainy and 65 degrees. Yes that is cold to us Floridians. It is a great day for soup. I LOVE potato soup and was happy to find a dairy free recipe for it. The last time I made something dairy free it …
Happy Memorial Day everyone!
A Hobo Meal is probably the easiest meal ever to make. You have all your sides in with your entree in a tin foil pouch cooking at the same time. It consists of Chicken, Potatoes, and Carrots. It can be cooked in the oven or the grill. I recommend cooking it on the grill.
1. Cut up the onion and place on the bottom of the tin foil sheet.
2. Place the chicken breast on top of the cut up onion.
3. Cut up potatoes (1 potato per pack or as much as you desire) and put on top of chicken breast.
4. Place carrots on top of potatoes or around (they have a tendency to fall off).
5. Put some butter and sprinkle some pepper over everything.
6. Wrap foil up to make a pouch.
Place on the grill for about 30-40 minutes, or until chicken is cooked thoroughly.
This is an easy and quick meal. You can’t go wrong with chicken and potatoes! When I was younger I would never eat cooked carrots and now I love them!
For as long as I can remember, Pierogi making has been a family tradition and it always called for all hands on deck. I have been helping Grandma make these Pierogies since I was little and I got to crimp the sides with a fork. These Pierogies are amazing and a staple in my family during Lent. For all my Polish and Non-Polish friends, I give you my Grandma’s recipe for Pierogies. (make sure you have a good crew to help because it is a lot easier with extra helpers)
