Who doesn’t love bread? I am still full from my Disney extravaganza yesterday that I didn’t even want to eat this bread after I baked it. I did though, obviously, and it was delicious! I don’t love a lot of blueberries in general, but the combination of blueberries and lemon work really well together. Recipe below!
- 1/3 cup melted butter
- 1 cup white sugar
- 1/4 cup freshly squeezed lemon juice
- 2 eggs
- 1 and 1/2 cups all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon salt
- 1/2 cup milk
- 2 tablespoons grated lemon zest
- 1 cup fresh or frozen blueberries
- 2 tablespoons all-purpose flour
- Preheat oven to 350 degrees F (175 degrees C).
- Butter an 8×4 inch loaf pan, line the bottom and two sides of the pan with the parchment paper, as shown in the photo.
- In a mixing bowl, beat together butter, 1 cup sugar, lemon juice and eggs.
- In a separate bowl, combine flour, baking powder and salt; stir into egg mixture alternately with milk.
- In the same bowl where you combined flour, add blueberries and toss them in 2 tablespoons of flour. This will help prevent blueberries from sinking.
- Fold in lemon zest, and blueberries into the batter. Pour batter into prepared pan.
- Bake in preheated oven for about 60 minutes, until a toothpick inserted into center of the loaf comes out clean. Cool bread in pan for 40 minutes on a wire rack.
I don’t have a zester tool so my lemon zest was a bit too large so that was unfortunate, but overall still very good. I put butter on my piece and it was excellent.

This is probably the easiest banana bread recipe ever. There are only 3 ingredients! I decided I would make mine to take up to Disney World with my family that is visiting from out of state. I made it gluten free so that my cousin would be able to have some. I have never made anything with gluten free anything so I was a bit nervous for how it would come out. Let’s see how it turned out!
1 box yellow cake mix (I used the gluten free yellow cake mix)
1. Mash up the 3 bananas and mix with the eggs.
2. Mix in the yellow cake mix
3. Bake for 40 minutes at 350.
I think I should have mashed the bananas more, but I think it still came out just fine. Made my kitchen smell amazing. My cousin has given the seal of approval, it is very good!!

The work week is hectic and if you are anything like me, the last thing you want to do when you get home is cook. Well, I have just the meal for you! It will take you less than 10 minutes to make it, and everyone in your household will love it! It is definitely one of those, I don’t feel like cooking, but my family needs to eat kind of meals. Pair it with some Mac and Cheese and dinner is ready!
In my family this is called Cheese Dreams. I don’t know why it is called that, but that is what mom called it when I was younger so that is what it is called! I used bread from Jimmy Johns, but you can use any type of bun. All you do is slap on a piece of cheese to each piece of the bun and put on as much bacon as you desire. Then, put it in the oven (I put it on broil) until the cheese is melted and bacon is cooked. Finally, EAT! This is almost as easy as making cereal for dinner. Give it a try, I think you will love it because who doesn’t love cheese and bacon!!
I am still working on that timing in the kitchen thing, so mine got a little burnt while I was mixing up the Mac and Cheese. Even a little burnt it was still delicious. Just a little tip from my experience tonight: make sure you keep an eye on it while it is in the oven, because it melts very quickly!
