Carrot Cake Muffins – Quick Breakfast

Happy Mother’s Day to all the moms and moms to be! My mom’s favorite is carrot cake so today’s recipe is right up her alley. I love recipes with minimal ingredients and this one is super easy. Recipe below!

Ingredients: 

1 box carrot cake mix

1 cup yogurt (I used Yoplait 100 Greek Vanilla yogurt)

1 cup water

Directions:

1. Combine all ingredients and pour into muffin pan.

2. Bake for 14-19 minutes on 350.


They are amazingly delicious and I don’t even love carrot cake that much. They are so good and light you will want to eat more than 1.
