Rhubarb Pie

I have been on the lookout for Rhubarb for awhile now because my dad loves rhubarb pie! Finding rhubarb in Florida is not an easy task, but Publix came through! In fact, when I went to buy it the sign was there, but the rhubard was not. Have no fear, the guy went in the back and got me some. Success! Recipe below!


4 cups chopped rhubarb

1 1/3 cups white sugar

6 tablespoons all-purpose flour

1 recipe pastry for a 9 inch double crust pie ( I did not use homemade dough. I used the store bought kind, and I think that works just fine!)


  1. Preheat oven to 450 degrees
  2. Combine sugar, flour, and rhubarb. Dot with small pieces of butter. Cover with top crust.
  3. Place pie on lowest rack in oven. Bake for 15 minutes. Reduce oven temperature to 350 degrees, and continue baking for 40 to 45 minutes.



Dad loves raisins in his rhubarb pie, so I added in raisins when I was mixing all the other ingredients together. It was super easy to make. I used to think it was a hard pie to make, but no, super easy! Dad loved it and was surprised when I told him that was for dessert!
