3 Ingredient Pancakes

I have been seeing this recipe on Pinterest pretty much since I joined the site. I have always wanted to try it, but I never buy bananas. It is not my favorite fruit. I had an extra banana though this weekend and decided to give this a whirl. At first thought, I didn’t really know how this would turn out. The only food I like bananas in is banana bread, so I was skeptical.

Ingredients:

1 Large Banana

2 Eggs

Cinnamon (optional) – I didn’t measure, I just poured some in.

Directions:

1. Mash up banana really well. No big chunks.

2. Whisk the mashed banana, 2 eggs, and cinnamon. I whisked the eggs before adding the banana and cinnamon, then I whisked it all together.

3. Pour into pan. I used a frying pan on the stove and set the heat to medium. I also sprayed my pan with pam before pouring in the batter.

Tip: I wouldn’t make them very big because you may not be able to flip them.

It actually makes a good amount of pancakes, I would have had more than 5, but my first batch was really runny and I couldn’t flip them. It took a minute for me to figure out how much to pour in the pan in order for it too work.

My statement above still stands, I only like bananas in banana bread. I did not like these at all. The banana taste was too much for me and I felt like I was eating banana eggs. They came out very thin though and had I liked them, I would be really excited about this recipe. Give it a try and let me know your thoughts. Don’t let my pickyness deter you!
