Amish Cinnamon Bread

Warning: Delicious recipe below! Normally Amish Bread has a more complicated process, but this recipe is so easy and so fast, you will love it. The cinnamon & sugar crust on the top is the only reason you need to bake this bread. The ingredient list is minimal and you probably have the majority of these items in your pantry already, so get baking!! Recipe below.

This recipe makes 2 loaves.

1 cup butter, softened
2 cups sugar
2 eggs
2 cups buttermilk or 2 cups milk plus 2 tablespoons vinegar or lemon juice
4 cups flour
2 teaspoons baking soda
Cinnamon/sugar mixture:
2/3 cups sugar
2 teaspoons cinnamon
Cream together butter, 2 cups of sugar, and eggs.
Add milk, flour, and baking soda.
Put 1/2 of batter (or a little less) into greased loaf pans (1/4 in each pan).
Mix in separate bowl the 2/3 c sugar and cinnamon.
Sprinkle 3/4 of cinnamon mixture on top of the 1/2 batter in each pan.
Add remaining batter to pans; sprinkle with last of cinnamon topping.  Swirl with a knife.
Bake at 350 degrees for 45-50 min.  or until toothpick tester come clean.
Cool in pan for 20 minutes before removing from pan.

I cut the recipe and half because I only have 1 loaf pan (no, this is not me asking for another one). It actually ended up taking about 55 mins for it to bake all the way through. Keep an eye on it so you don’t overcook it.

The inside almost looks like a smiley face because that is what will be on your face when you eat it! I should have put more of the cinnamon sugar mixture in the middle, but I didn’t measure out when I poured it into the pan. The top had a lot, and actually it tastes amazing! Make sure you swirl the knife so you get those little crusts of goodness. (I actually have no idea if that is what makes it that way, but it’s my blog and I can say what I want!)

It really is delicious. It doesn’t even need butter on it, but you can add it if you want. It is delicious both ways, I tested it for you! I am sure this loaf won’t last long. You could make cupcakes with this too if you don’t have loaf pans. Now go bake!
