Carrot Cake Cheesecake Bars

Yesterday was mom’s birthday and so I wanted to make a dessert that had her favorite things; Carrot Cake and Cheesecake came to mind. If I could put them together in one dessert it would be perfect. Well, I was able to put them together and major deliciousness happened. I am not a big cheesecake fan or carrot cake for that matter, but even I enjoyed these! Recipe below!

For the carrot cake bar:
1 box Betty Crocker Carrot Cake Mix
1 egg
1 stick butter, soft
Cheesecake layer:
16 oz. cream cheese, soft
1/2 cup sugar
2 eggs
1 tsp vanilla
1 container Cream Cheese Frosting (I didn’t put a frosting on mine, but I think even Cool Whip would be good as a topping)
Preheat oven to 350 degrees
For the cake layer:
Beat the cake mix, egg, and butter until it turns into a thick dough.  Press dough into a greased 9 x 13 inch pan.  Set aside while you make the cheesecake layer.
For the cheesecake layer:
In a medium sized bowl beat the cream cheese until smooth.  Add sugar, eggs, and vanilla and continue beating until creamy and smooth.
Pour the cheesecake layer over the carrot cake bar in the pan. 
Bake for 30-40 minutes or until the edges start to pull away from the pan. Let cool completely. 
Cut into squares and top each square with a dollop of cream cheese frosting.

photo 2 (21)After I baked it and it cooled, I stored it in the frig until I was ready to serve it. Mine didn’t come out perfect when I cut them into squares, but they still tasted great! Everyone loved them!
